Hayabei Sushi is a chef-owned Japanese restaurant founded by Chef Calvin Lin, who trained and worked in Tokyo, Japan. Built on a deep respect for traditional technique and ingredient integrity, Hayabei Sushi offers an elevated yet welcoming dining experience in the heart of Souderton.
Our philosophy is rooted in seasonality, balance, and precision. Every dish is thoughtfully prepared to highlight the natural flavors of the finest ingredients, creating a memorable experience for both sushi enthusiasts and first-time guests.

With over 13 years of experience in sushi craftsmanship, Chef Calvin Lin is the founder and executive chef of Hayabei Sushi.
His culinary journey took him to Tokyo, Japan, where he trained and worked in a traditional sushi environment that shaped his deep respect for precision, seasonality, and ingredient integrity. It was there that he developed his philosophy — allowing the natural flavor of each ingredient to shine through simplicity and balance.
Chef Calvin specializes in premium ingredients such as Japanese bluefin tuna, Hokkaido uni, and A5 Wagyu, carefully selecting and preparing each piece to create a refined and memorable omakase experience.
For him, sushi is more than cuisine — it is a lifelong dedication to craftsmanship and hospitality. Through Hayabei Sushi, Chef Calvin brings the spirit of authentic Japanese dining to the Souderton community, offering guests not only exceptional food, but a warm and personal connection at the sushi bar.
